Buffalo Chicken Pasta

Spice up pasta night with this creamy, comforting Buffalo Chicken Pasta—a bold, crave-worthy dish that’s as customizable as it is delicious. Tender noodles are coated in a rich buffalo-infused sauce and tossed with juicy shredded chicken, balanced by a touch of bleu cheese for that classic cool-and-spicy combo. Want more heat? Go for it. Prefer it mild? Simply skip the red pepper flakes—you’re in control. The real flavor twist? A generous sprinkle of crushed buffalo almonds on top, adding a savory crunch that takes it over the top. And don’t forget—this one’s a weeknight winner!

Ingredients

  • 1 lb. Boneless Skinless Chicken Breast; shredded  
  • ½ cup Bleu Cheese Dressing
  • 2 tbsp Butter; divided
  • ½ cup Yellow Onion; diced
  • 1 stick Celery; diced
  • 3 cloves Garlic; minced
  • 14.5 oz. Diced Tomatoes; undrained
  • 4 cups Low Sodium Chicken Broth
  • 1 lb. Protein Penne Pasta
  • ½ cup Buffalo Wing Sauce
  • 8 oz. Light Cream Cheese; softened, cubed and room temperature
  • 1 ½ cups Cheddar; shredded and room temperature
  • 1 cups Mozzarella; shredded and room temperature
  • Crushed Buffalo Almonds, for topping*
  • 1 pinch Red Pepper Flakes; for topping

Instructions

  1. In a large high walled skillet, melt butter over medium heat.
  2. Add the onions and celery and cook for 5 minutes, until softened. Add the garlic and cook for 1 more minute.
  3. Add the undrained diced tomatoes and chicken broth. Bring to a boil and then add the pasta. Submerge the pasta into the liquid and let it come back up to a boil.
  4. Cover and let it boil for 10-13 minutes, or until al dente. Refer to box for guidance on cooking time. Lift the lid and run a silicone spatula underneath the pasta a few times throughout cooking to ensure the pasta doesn’t stick.
  5. Reduce heat to low. Add the buffalo sauce, cubed cream cheese, and shredded cheese. Use silicone spatula to gently stir. The sauce will seem thin at first, but it continues to thicken as it stands and will thicken further at the next step.
  6. Add the shredded chicken and stir gently.  
  7. Sprinkle with crushed Buffalo almonds and red pepper flakes on top.
  8. Serve and enjoy!
